A NEW Executive Chef has been appointed at an award-winning Michelin starred restaurant in Grange-over-Sands.
Paul Burgalières helped to lead the team at L’Enclume to win the restaurant its third Michelin star in 2022, in its twentieth year since opening, and he now has the honour of becoming the Executive Chef.
As Executive Chef, he will oversee the restaurants of L’Enclume, Aulis Cartmel, Rogan & Co and Henrock across Cartmel and Windermere.
Paul takes over the position from Tom Barnes, who is set to open his debut restaurant Skof next year.

Born in Limoges in the west of France, Paul moved to Cartmel and assumed the role of Head Chef in 2017.
He previously worked with Michael Trama in Puymirol and Michel Rochedy in Courchevel, before moving to the UK to work as Chef de Partie at L’Atelier Robuchon.
He then took up the same position at Copenhagen’s Geranium working his way up to Assistant Head Chef in just two years.
Elsewhere under the UMBEL Restaurant Group umbrella, Alex Rothnie will step up to the role of Head Chef at L’Enclumbe, and Kayleigh Thorogood has been appointed as Assistant Operations Manager of Simon’s Rogan’s North West restaurants.
Chef-owner Simon Rogan extended his congratulations to the pair.
He said: “Our team in the Lakes is hugely talented and I am proud to work with such tremendous individuals. To see them grow and develop is a privilege.”
