DOORS are officially open to a new cake shop in Barrow which offers a host of tasty treats.

The Chunky Monkey Cake Company has expanded from a stall in Barrow market to its very own shop boasting a range of delectable goods.

Jo Nixon, owner of The Chunky Monkey Cake Company, started up the business as a market stall three years ago before expanding to a location opposite Dalton Road.

The 39-year-old undertook a 10-month renovation of a unit outside the Food Hall entrance of Barrow Market into a cake and sandwich shop.

Miss Nixon described the big move as ‘daunting’ but ‘very rewarding’.

“It’s a big step for me and the business,” she said.

“It’s took us three years to get to this stage so lot of time and thought has been put into it.

“I feel a great sense of achievement having moved into a shop but the market will always hold a special place in my heart.

“I don’t think I would have been able to move into a shop without having had a stall in the market first.”

Miss Nixon plans on expanding the space further into a bakery and a cafe in the New Year.

“After January, we’d like to officially move in the bakery and cafe area which we’re really excited about,” she said.

“We’re really happy to have reached this stage after ten months of work, it all feels like it’s paying off.”

Miss Nixon said the response from the local community has been ‘fantastic’.

“We just want to say a huge thank you to everyone who has supported us,” she said.

“It’s great seeing everyone’s friendly faces come into the shop and support a local, independent business.”
