A POPULAR south Lakes pub is set to be transformed by a six-figure sum revamp.

The owners of The Mill in Ulverston have their sights set on becoming the best gastropub in the area.

To achieve this the owners have committed to significantly improving the dining experience, as well as freshening up the front of house.

Phil Simpson, one of the two directors of C2 Investment, who own and manage The Mill, spoke of the upcoming plans.

He said: “I think we’ve got a lot of it right in The Mill, but we haven’t been happy with the food offering.

“The food has been ranging from quite good to excellent, but it’s never been consistently excellent. All our venues try to produce the best food and drink possible in the area.”

For the past six months Mr Simpson has been working on how to take The Mill to the next level.

One of the most exciting developments is the hiring of a new chef consultant to work on improving the food on offer.

The owners are not ready to release the identity of the chef, but they have said that he is one of the best, and most highly regarded chefs in the UK.

Mr Simpson said: “They’ll be unveiled when they feel their product is good enough.

“In the next three to six months they’ll be working in the kitchen, on the menu and style of food.”

As well as an overhaul to the menu, there will be work done to bring the restaurant’s decor up to date, as well as upgrading the front bar.

Mr Simpson said: “We’re going to sharpen up the ground floor and the restaurant. Not dramatic change, but sharpening it up.

“We’re really happy with the drinks. It’s very busy on the weekend. We’re happy with that.”

With work already under way, Mr Simpson has said he expects the bulk of the changes to be in place by Christmas.

C2 Investment are also hoping to have a new general manager in place by the festive period.

Mr Simpson said: “If we’re the best then we will receive the plaudits commercially. We want to be the best gastropub in town.”
